Peanut & Berry Raw Tart
Ingredients:
- Dry roasted unsalted peanuts, 1.5 cups
- Pitted dates, 2 cups
- Raw cashews, 1.5 cups
- Frozen mixed berries, 1 cup
- Maple syrup, ¼ cup
- Water, 3 tbsp
- Tiny pinch of salt
Instructions:
- Line a 9 X 1 inch tart pan with plastic wrap or parchment paper. This makes it easy to remove the tart from the pan after it has frozen.
- Soak the cashews overnight. Rinse and drain them in the morning.
- Soak the pitted dates for 30-minutes.
- In a food processor, mix the peanuts and salt until it forms a slightly chunky crumb. Set aside in a mixing bowl.
- Add the soaked dates (minus soaking water) to the food processor and mix on high until it forms a paste. Add the peanut crumb back into the food processor and pulse until everything comes together into ‘dough’. Alternatively, you can mix the nut/date combination together using your hands in a large mixing bowl, which is what I like to do!
- Press the dough into the lined tart pan, and place in the freezer to solidify.
- In a high-powered blender, mix the soaked cashews, maple syrup, water, and frozen mixed berries until it forms a creamy texture.
- Remove the tart base from the freezer, and pour in the cashew filling. Spread the filling evenly using a spatula.
- Place the tart back into the freezer for 1 hour to let the filling set. Enjoy! Note: Keep this dessert stored in the freezer.
