Peanut & Berry Raw Tart

Ingredients:

  • Dry roasted unsalted peanuts, 1.5 cups
  • Pitted dates, 2 cups
  • Raw cashews, 1.5 cups
  • Frozen mixed berries, 1 cup
  • Maple syrup, ¼ cup
  • Water, 3 tbsp
  • Tiny pinch of salt

Instructions:

  1. Line a 9 X 1 inch tart pan with plastic wrap or parchment paper. This makes it easy to remove the tart from the pan after it has frozen.
  2. Soak the cashews overnight. Rinse and drain them in the morning.
  3. Soak the pitted dates for 30-minutes.
  4. In a food processor, mix the peanuts and salt until it forms a slightly chunky crumb. Set aside in a mixing bowl.
  5. Add the soaked dates (minus soaking water) to the food processor and mix on high until it forms a paste. Add the peanut crumb back into the food processor and pulse until everything comes together into ‘dough’. Alternatively, you can mix the nut/date combination together using your hands in a large mixing bowl, which is what I like to do!
  6. Press the dough into the lined tart pan, and place in the freezer to solidify.
  7. In a high-powered blender, mix the soaked cashews, maple syrup, water, and frozen mixed berries until it forms a creamy texture.
  8. Remove the tart base from the freezer, and pour in the cashew filling. Spread the filling evenly using a spatula.
  9. Place the tart back into the freezer for 1 hour to let the filling set. Enjoy! Note: Keep this dessert stored in the freezer.
